Well Ive had these guy for a few months. A friend of mine has one that isnt in any brackish water. Is there a way to switch them over so I can get them in a big tank?

It depends on what species you have - most of the commonly avaliable species are best in brackish water anyway, so I wouldn't do the switch IMO.

you could use stuff like ph down/up to slowly convert the water to regular freshwater

I would not use this stuff at all...if you want to go from brackish to fresh, just add freshwater on the water changes and little by little the salinity will drop with addition of FW and removal of salt
