How do I get my water acidic or soft? I've been told from other people to not worry about water acisity. Is it REEEAAALLY important?
 
Driftwood, bog wood, any wood that will leach tannins will lower pH.
 
peat moss also leaches large amounts of tannins. Can be used as substrate, or in filters. Tannins are tannic acid, the same thing that flavors anything aged in a barrel.

from personal experience, steer clear of these products since they also add lots of phosphates to the tank when altering the PH of the tank. the PH was not consistent with the products either, and the last thing you want is a PH swing. what species are you trying to change the PH with? I needed to change the PH from 7.8 to about 6.8 for my FW shrimp tank. after much trial and error, i found that it is well worth hunting down and paying for some ADA aquasoil amazonia, as long as it is a smaller tank. no ph swings and it works even with higher range PH
 
Neutral regulator from SEACHEM is POS I have used it and done multiple test using different amounts and it never does what it says.
 
Almost all of the buffers except seachem are phosphate buffers so your phosphate will shoot up. Also unless you have soft water or are using RO the buffer typically don't work or you have to dump a hell of a lot of it in. I use Seachems GH and Alkalinity buffer to get my GH and KH to 6dGH and 3-5dKH. I use large wads of peat in my canister to acidify the water and produce that light tea coloring. My water sits at 6.9-7.0.

As far as do you have to adjust your pH. Opinions vary. Some species can tolerate a wide range some can't and this will also vary by individual fish. I use RO and recon chemicals so that no matter where I move the parameters will always be the same.
