I have never kept any kind of molly, but now have a group of veil tail mollies. What is their actual size full grown for males and females? I am also looking to breed them in a planted tank and from what I read they do not need salt. Is this correct?

The biggest one I've seen was about 3.5" and a female.

there was one male that I had 8 years ago, not sure if he is a hybrid or just a normal gold sailfin molly but he was 10.5cm when he die which about 4''. I've never seen any that bigger than that.

Biggest mollies I have seen lately come from Goliad Farms. The males are over 5" and females much larger. They are grown outdoors in large raceways.
As far as salt is concerned, it is not needed.

Salt isn't needed by any molly. What type of salt did you mean?
These get to 5 inches or bigger.

I've seen wild velifora mollies in Cenote Cristalino back in 2013, that appeared to be over 7", and very chunky. The largest males held territories below a 10" depth, in sun drenched algae covered boulder areas. They were almost the size of the adult Rocio they shared the cenote with.
Below is a video of Eden cenote where the largest were @ 5", but this cenote had much less algae than Cristalino.

those are some very big molly!

Your Molly's can benefit from adding (marine)salt by raising hardness and PH, not from the salt per se.

They'd need to be slowly acclimated to full marine, though.
