Has anyone modified an air filter to filter out odors in the air by using baking soda or activated carbon? I was thinking of buying those activated carbon filter pads from fish stores and installing them in an air filter to replace the pads it currently uses.

the CFM needed will be far too high for anything passive to work on a system like that, as the chemicals/sent is very concentrated

Not sure, but you can try.
Update me if it works, Im also interested in using it to remove odour without placing carbon in the filter
