I know gars only tend to try to eat what they can fit in their mouths. Any suggestions on what type of tank mates would be best suited? I'm thinking paddlefish and sturgeon because obviously they get large and once they all get too big for the current tank, they go into the pond. Thoughts?

The Paddle fish is a filter feeder so it probably won't survive in a pond. It will also depend on the temperature of your area. Found this link other members will chime in.

The paddlefish will do far better in the pond than in a tank. They can learn to eat bloodworms and pellets as well.
