hey i have an ammonia brake out and the water clouded. the nitrate and nitrate level are perfect. thought this was odd. any ideas

the first thing, do a 25% water change and make sure the mechanical filtration and chemical filtration is cleaned too
Don't "clean" your filter. Bacteria grows on your mechanical filtration as as well. Also, chemical filtration is NOT necessary.
siphon any fish waste and left over food from the bottom part of the tank..
To remove the cloudiness use Seachem Clarity or similar product
DON'T do this. No need.
To improve the tanks biological filtration add Seachem Stability or similar product with the water change
I do really like stability. But you don't need to add any on water changes unless you are cycling, in which case I would say add daily until you get fully cycled.
Don't forget to add Seachem Prime or similar product to remove chlorine, chloramine and ammonia with the water change.
Prime is good.
Try to use Fluval Zeo-Carb, Fluval Ammonia Remover or similar product with your chemical filtration...
Why? If these products are eliminating the ammonia in the tank, then what is your bacteria going to feed on? These are NOT needed and can screw up your cycle
Try to reduce the feeding until the tank is fully cycled...
