Amph peeling

I currently have a male red devil about 5.5-6". My question is once they peel do they ever change again or is that it. He has great shape and personality but he faded to a solid yellow/gold color not really into the color would rather he went to a more orange or white etc. He has some white spots but they are very small. Keeping him either way due to great personality but is there a chance he will fade/peel again?

I've heard they don't get white/yellow with age. I was told they peel to white or yellow, and then get closer to orange as they get older.

If that's not true, then I'm gonna get some Piebald parents and a bunch o tanks and breed a solid yellow, or solid white, 14 inch monster midas. The big orange ones are OK, but a big white or lemon yellow one would be awesome...
 
Generally they lose their juvenile colors (peel) and become whatever shade they are destined. As they get older, most will get lighter in color. Older is a relative term..I've had Citrinellum that were 17 years old that once a nice vibrant orange were te same color but a shade so light it was almost white. Full color of a juvenile Amphilophus type fish varies, but typically you got what you are going to get after a couple years.
