A little off topic I know, with Carnival and Fat Tuesday coming up, a tradition here in Panama, and on our island Taboga, is a hearty iguana stew. In order to get enough iguanas, now that its the dry season, the uninhabited side of the island is often set ablaze to drive them toward water. The fire jumped toward the city side a few days ago.

The fire crept toward the Pacific the next day and still smolders a bit.

I still have not tried it, some friends say it (of course) is indistinguishable from chicken, as long as your not looking, and spiced up. Although it is sometimes cooked with skin on, making it a bit more crispy, and sometimes, having a purplish color.
