Are there any none fish, none aquatic inverts (Shrimp, crawfish), none plants I could keep in a 2.5g? I've tried shrimp and bettas, just can't get into them. Not a dwarf puffer fan either. So are there any amphibians/reptiles/insects I could keep in a 2.5g for life?

madtom catfish. those things are awesome! I kept a few in a 10 gal once

I'm confused about trying to keep none fish. If you have none, then there aren't any, so what is the question? EDIT: Oh, I get it! You mean non-fish! Okay, okay...

ADF's can't even swim well. They won't jump, but could crawl out and die.

2.5 is too small for a madtom unless you put a 5g sump on it.

Probably not worth putting a dwarf puffer in there. In a tank that small, even if all other conditions are met well, it would just pace mindlessly. It would likely not respond to your presence. Their instinct tells them to get out of the little area and they will just keep scouring the perimeter of the tank trying to find an exit.

I'd do a couple of ghost shrimp or other small, hardy invertebrates and lots of live plants, bright light and no filtration. Dwarf frogs are usually endlessly boring except for feeding time.

Or do the freshwater equivalent of live rock. Grab a fistful of mud from your nearest large outdoor pond and drop it in there. Lightly filtered and lightly fed, it will spring to life with all sorts of critters. I got a constant culture of scuds, snails and tubifex going on that is awesome.

You could culture mealworm beetles or fill it with soil and put earthworms in it, watching them tunnel around against the glass.

I highly doubt any commonly available reptiles or amphibians would thrive in a 2.5g tank.

Ooh, ooh, I know! If you live near the beach you can do a yellow shore crab biotope. Easy to maintain and free if you're near the beach. Don't take anything but the crabs, though.
