My local grocer had skate wing filets the other day, so I got a pound ( for 10 a lb ended up being 2 full wing sets, not bad seeing as though the only local restaurant I know that serves it charges 30$ for the dinner).
Wrapped it up in thin cedar with sweet and hot peppers and jerk seasoning, and it was one of the most delicious fish of my life. And I eat a lot of fish, this was great. And farm raised I believe.
