There is a restaraunt in my town that has an aquarium/deep fryer combo setup. The aquarium water and the boiling hot grease share the same tank, with the drippings of the food items sinking out of the grease section and falls down below to feed the fish.
Its definitely a gimmik setup with least concern being the fish, obviously. There are no bubblers (as this would probably stir up the distinct layers of water and oil) and with the layer of oil, the only oxygen transfer must be done by the filter, which is all hidden.
I guess the fish learn the hard way not to swim too high or to close to the boiling hot layer of oil.
