I've seen people and an aquarium keeping arapaima, alligator gar with oscars and other cichlids without the cichlids being eaten at all. How's that even possible?

I suspect it's a case of "it works until it doesn't". A gar might get along swimmingly with cichlids for a time, in the same way you can handle a hot snake without hooks for a time, but when something goes awry we don't hear about the keeper bragging about it online.

So only the success stories spread.

I'm sure you'll hear a lot of keep them well fed and they'll be fine. Large predators are opportunistic feeders regardless of how well they're fed. So it's just a matter of time until something goes missing.
True, I'm just flabbergasted that the paima didn't eat those things, yet.
