I'm actually a fan of unusual characins, which I keep in my overgrown 32 gallon (currently trying to source a poecilocharax weitzmani). However, I find the whole monster/predatory fish thing interesting. Nothing like watching an aimara lunge at something. For looks, I'd say peacock bass are my favourite. For personality, a catfish of some kind. Not that I'd have the money/space/time to put together a monster tank.
One question... has anyone taken a monster sized tank and just filled it with crazy numbers of little fish? That would make an cool display. Another idea I had was to take a big tank, fill it with guppies or something that breeds quickly, and then put in a small predator, like a leaf fish. The challenge would be to bring the tank to equilibrium, with the feeder fish reproducing at the exact rate they are predated upon.
