Have an overflow with 3 1" bulkheads set up as a bean animal right now, wanting to add another filter sock in my sump. Could I convert to dual Herbie without fighting adjusting two gate valves on one overflow? I believe I will be fine but looking for reassurance.

Yes you can just valve both lines and adjust them back to allow for full siphons on both.
The safety factor goes down a little but you still have the E-drain for a backup.

Could you keep the Bean and change the other end to feed two filter socks ?

You will be fine. I'm running a similar design except mine is setup as a Ba. Just make sure your using gate valves on both full syphon drains. You will be able to flow more water through your sump then before with this setup.

You could add strainers to both main siphons. It reduces intake only slightly, but helps reduce any chance of large objects getting lodged. Since you will no longer have a 1:1 e-drain.
