Beginner plants...

Swords. Moneywort. Hornwort. Foxtail. If you only want one plant, moss is tough and grows great, but may strangle other plants.
There's several types of java fern (I like trident). Anubias are another. I like dwarf water lettuce for floating, but frogbit is easy as well.
I would stick to epiphytes if it was me that was you don't have to worry about substrate.

Lily dwarf and valisneria to add. The other members have mentioned some good plants.
I found Bucephalandra fairly easy, similar to but more pricy than Anubias. Another epiphyte you can try is Bolbitis, an African fern similar to Java fern that is said to be easy, but didn’t work out for me.
I grow pothos out of the top of my guppy tank. It gives the tank a nice look with the plants coming out the top and the roots under water plus my guppies love swimming through and hanging out in the roots
I have found success and failure with a lot of the listed easy plants to grow...my favourites would have to be Anubias and crypts
Only problem i find with crypts is they are heavy root feeders and are more than likely to melt when first moved to a new rank before re-growing...
I definitely like Bucephalandra due to the many varieties and colors although price maybe a bit off putting depending on the country you live in...
Anubias is pretty much impossible to kill, so thats always a good choice...
Mosses again are pretty hard to kill and are great for covering wood etc with...
So really depends on what sort of look you are after...
