Is there a particular reason why polyester filter floss/sheet isn't used for bio-media? (thinking sumps mainly), it has far more surface area than nylon scrubbies and is easier to get in large volumes.

Any thoughts on this?

Good question.

Mostly because it gets dirty faster, harboring garbage,so you need a finer pre-filter, packs down from pressure (so it doesn't lend itself well to a wet/dry situation) and then doesn't flow well. If you make your W/D a side flow and suspend it in a frame it works but you have to keep your pre-filter clean.

I tried several designs with it, none with very exciting results.

Give it a try if you have the extra space.
