I'm the son of a home ec teacher...look out vegetarians...you just opened Pandora's box.
Cupcakes
1 1/4 cup sugar
2 eggs
1/3 cup margarine
1 can black beans pureed
2 tbls orange zest
2 tbls vanilla extract
1 cup flour
1/2 cup cocoa powder
2 tsp baking powder
Beat sugar eggs and margarine until creamed. Fold in zest and vanilla in separate bowl with bean puree. In 3rd bowl mix flour, cocoa, and baking powder. Fold egg mixture into bean mixture, then fold into flour in thirds. Fill lined cupcake tins and bake for 20 min at 375.
Frosting
1/2 cup margarine
2 cups powdered sugar
4 tbls orange juice
Beat margarine until smooth, beat in sugar then add juice. Top cupcakes, enjoy!
