Black Crappie Coloring

Ive had Black Crappie for about 1 month and htey have grown substantioally (pardon my grammar) but their color is lackign at 5in long. I have snails, feeder guppies, earthworms, brine shrimp flakes and a high protein color enrichment flake. The fish looked washed out as a sign of improper diet or bad water quality. But considering they've each grown 1-3" why would this happen? And I feed them 1-2 times per day and sometimes leave the light on all day and sometimes not and their color stays the same.
 
Thanks. I see all these nice looking bass and other sunfish and was worrying they were not receiving a proper diet. They have a lighter substrate or small tan/white/bashe gravel and green plants and dark maroon rocks. The lights are on and off so they get enough of both i would guess. Will post pics soon, pretty sure their white crappie also
 
Snookman's got it. Black background and brown gravel will give you better color. If you don't want a background, adding driftwood and plants can help.

Temperate fish seem to change color more than tropicals (or at least the tropicals that are popular in the trade). My warmouth can go from ghost pale to nearly black in just a few seconds.
 
Noto is correct, all the sunfish species seem to be able to change color or lack of it at will, or at least on their mood, or based on a particular occurance such as when you first turn on the tank lites
