Btw, he/she is about 3 to 4 inches from tail to nose and about 5 to 6 with the claws. I'm curious because they say the knight gets 12" and the Hammer's gets 5 to 6" I think?? Are there any other possibilities out there?

I believe its a hammer because of the bumpy claws, I have only seen one blue knight and it had smooth claws. I may be wrong though.
 
I am pretty sure the blue knight is a common name for some of the cherax. Yours is not a cherax.

Im not sure what it is but very nice. Mine look like that but they are cobalts.
 
Is a cobalt another species of blue crayfish? I did attempt to look up more info on these guys, but didn't find much.
 
Hmm, Im not sure. Your looks like a cobalt, maybe they are the same but different names. Hold on I will check.
 
Yup, they are the same, so you have a hammers cobalt blue lobster crayfish.
