I would start here. I have about 20 books on cichlids and I have never found the perfect book. You get some from each that is good. There are some listed that focus on Central and South American cichlids.

My favorite is The Cichlids of Central America by Ad Konings

It's a little old and some of the nomenclature is out of date but there is no better book that describes the evolution and specialization of cichlids in central america: why they are the way they are.
