blue crayfish are blue and definitely bottom dwellers (you didn't say had to be a fish)

what is the expectations do you want to get from a bottom dweller in your tank? FOR the looks alone or for its purposes?

There are plenty of fish with all different colors and in between. Just have to piece together the reason you want the bottom dweller to be and then start looking from there.
