What crayfish do you have in mind?
My blue cuban crayfish (Procambarus cubensis) were mating all the time - just one male and one femaile in a 50l tank (about 12 gal) with some mollies and hardy plants. You need to give them as much hiding places as possible (mine loved coconut shells and Java moss). Temperature about 24 centigrade. The moment the eggs are fertilized the femail retreats to some shelter and does not come out to eat for about 2 weeks, until the young leave her. But you can throw some food very close to her, so she does not have to come out to grab it and she will eat. The young are quite numerous - about 50-80, grow fast and are cannibals. Some of them will survive even in their parents tank, because they are not eaten by the adults until they reach about 1cm (3/8'').
For me, breeding these guys came quite naturally, they do it by themselves :D . Good luck

Here is some photos of the sex organs. The first is a female. Look at the third set of legs counting from the tail up. There are two clear discs at the base. The second pic of a male has no discs and what looks like mini legs pointing upward at the start of the first set of legs.
