i have 5 2" demasoni in a 55g tank and im planning on getting about 5 more and was wondering if adding a peace of texas holey rock in the middle would be enough hideing space

It really depends on the size and the number of holes in the Holey Rock. It could definitely work, but like I said, it depends. How big is the tank. What is the M/F ratio of your group? You should shoot for 3M & 7F if you are just going to keep 10.
the rock is 1 ft long 1 ft wide and 10" tall and has some good holeys and caves around it. And the person i buy fish from dont kno how to sex them =(
