in the past 2 weeks, I have lost about 3 koi from jumping out I was told that the male koi will bash the female to get the eggs but I don't know if that is what is going on if it is what do I do and what do I do to get them to breedView attachment 1405981

From what I've researched is that you want to have a ton of plants and shallow areas. Granted no matter what you do there is still a risk of them beaching themselves and dieing. Hopefully someone else will chime in with their own personal experiences in this subject.

Breeding behavior is completely different from how they act normally. If you watch a video or two you’ll see what I mean.

Ive heard some koi keepers with rocks around the edges of the pond will lower the water past the rocks to keep the females fromgetting injured on them. It also helps to keep them from getting pushing/knocked out of the pond. I’ve never had a female jump from spawning, but that doesn’t mean it can’t happen.
lowering the water at least a foot down should help some. You could also net the pond when you aren’t around to keep them safe. This is also very common.

To induce spawning I’d do a big water change the evening before and put out a home made spawning mop. I used mesh fabric and yarn for mine.

Below a koi and goldfish pond I had, although it the goldfish that are breeding, its basically the same.
Male try to push female out of the water. If uyou use full screen you can see eggs thrown on the upside of the lily pads.
I have also watched wild carp do the same in the shallow in springtime, actually pushing females almost onto the banks.

What time of day? Mine always spawned between 6am - 10am. They spawned a few times between June and July here in mn.

How old and what size are your koi?

I forgot to add a picture. This was one of the spawns I had. The platinum is the female and she was being chased by three males. 35F8E0BC-11F2-403A-900D-4C7F0E26D0F8.png

They chase fast and make a good bit of noise and commotion.

the two big ones are over 50cm and like 15 years old I think
there are a few like 5 to 20 cm but they have not jumped out
i live in Sydney so i don't know the weather different

Have you checked all water parameters and given them a good look over to rule out any other reason for them jumping? Just to cover all bases before focusing on spawning.
