Looking to set up either a 55-75 gallon tank with Buffalo Heads in it. What would be the optimal amount to have in a tank that size? This would not be a species only tank either looking to add a few non agressive smaller cichlids and a few other fish.

If it were me, in a 55 I'd maybe put a trio, a 75, a quartet, or quintet.
These are bottom dwellers, so to me the best tank mates would be mid-level and upper level fish species from the Congo, and not necessarily cichlids, to provides a dither type sense of security to the cichlids.
Congo tetras come to mind as they are territorially non-competeters, or a surface dwelling African killifish.
Although not from the Congo (but are African), Gularis killifish get large enough, and provide color.
