I would use an old (smaller) tank and make seperate chambers out of plexi.

Plexiglass is like acrylic.
 
totally agree use a smaller tank or use rubbermaid containers
 
The 2200 model will only pump 350 gph at five feet. That will give you less than three turnovers (and assuming you have zero restriction on the system).

The 3000 model will pump 500 gph at five feet. Add a tee and a ball valve to the return. This will allow you to shunt some water back to the sump if you do not want 500 gph of flow.

Umm chompers... i have no idea what you are talking about... turnovers?
zero restriction?

if i use a tank.. what size tank would be good for a 125? Including the space for heaters and stuff like that.

It depends on what you can fit in your stand. Shoot for around a 20g. Bigger is better.

A turnover is the term given when one tank volume is filtered per hour. Have a look at this link for more info.
