Can you do a water change during the cycle? details....>

I have a 55 that i am cycling and for over a week now i have had a high ammonia concentration. The tank is almost 3 weeks setup. Question is can I do a water change before the cycle is done to remove some of the ammonia? or will it mess up the "cycling" process?
 
If you have fish in there then you should change the water. Otherwise too high ammonia would kill your fish.
