I have been treating my tank for ick and it's gone really well so far. It's been about 6 days (and I will continue to treat for a full 14) with salt treatment, increased heat and slight water change.

All of my fish seem to have improved except for 1. She's the most ick ridden of them all and is COVERED in spots. The others are now seem to be completely clear. She seems to behave normally but there is almost no sign of the spots leaving her or getting worse/better.

She's one of our rainbow fish, one of the largest we have, but we are starting to think for the safety of the tank that we remove her. It's just that everything in the tank has improved EXCEPT for her and I don't want to come up on 14 days of treatment and still have a sick fish (while the rest seem fine).

Also I can't seem to understand why her ick is so bad... perhaps she's just so ick ridden that there's no turning back for her?

Today she has less spots but seems to have wounds on her sides around where her scales are. Should I just treat with melafix?

You can drop 1/2 the doses of ich meds to speed up progress.

I haven't been using ich meds. I have been using the salt + heat method which has worked like a charm. It's just this one particular fish who was particularly hard hit.

She now only has a few spots.. but now has what looks like wounds around her sides outlining her scales, which makes me think that she is wounded from the ick.
