Catfish doesnt have much of an appetite latley

So as some of you know I have a nice 14 inch vulture cat that is by far my favorite fish and truly a pet to me rather than just a fish. The other day he was being a bit shy when trying to feed him which is not normal as he normally swims up the glass looking for food and will usually have no problem taking food out of my fingers. So about 4 days ago now I was feeding him silver sides and he wouldnt come up and take them from my fingers like he usually does, so I just dropped one in a let it sink to the bottom on the side of the tank he usually hangs out, and when I dropped the silver side in he freaked out darting around the tank and hit a large piece of drift wood in my tank as well as the glass, and ever since then I cant get him to eat anything and has been acting very skittish and darty almost like he is stressed and this behavior is all new within the last 4 days, anyone have any advice or know what the problem could be?

I would check water parameters and as already suggested water changes
my water parameters seem to be perfect except my nitrates are a bit high so that is kinda what I think may be going on, I've been doing large water changes almost every other day and using seachem prime to try and reduce the nitrates to around 10-20 ppm at the most but cant seem to get it below 60-80 ppm. I also have been cleaning my fluval fx6 canister more often than I usually would, I'm wondering if the tap water is containing high levels of nitrates making it a challenge to keep it down at a safe level in my tank.

you using tap water or tank water when you clean the fx6? are you replacing the media entirely? i noticed if i completely change out my foam and bio media my nitrates will build quickly.
 
Check your tap waters parameters, do you have gravel in your aquarium? Could be excessive detritus in the gravel if you have not vacuumed the gravel. Any other filters aside from the fx6?

okay yah I'll do that, and I clean my bio media and foam with water from the tank in a 5 gallon pal and rinse the rest with tap water, and I do have a gravel/ sand mix in the tank about half an inch to an inch in some places, I vacume into the gravel/ sand almost every time I do a water change so pretty often I do that. I have one other filter besides the fx6 its a marineland HOB that I put fluval bio rings in with the regular filter cartridge and a carbon pouch that I change every 2 weeks, I clean that filter when I do my fx6
