Chocolate Cichlid ? on changing colors

I think this is normal for this species but would like more input on this. My 2.5 inch Purple Chocolate from Rapps changes colors all the time , it is almost like it is a chameleon because he seems to adjust around his or her surroundings. All the ones I have kept in the past changed colors quickly and dramatically. I found them to be temperamental as well, often sulking after water changes or moving decorations in the tank. They always "cheered up" after a few hours and got back to normal. Nice fish.
 
My Severums at my moms do the same thing. He will be like a pale green color, and you can see his stripes at all. The parrot cichlid will come within a few inches of him and his bars will turn solid black almost instantly from pale green

They are available in my LFSs and their color ranged from light pink to dark chocolate. Does dark chocolate mean dominant, and light pink mean stressed? I prefer the light pink color.
 
Love these guys. I started with two of them 18 years ago and haven't looked back. I'm into the more aggressive ones now but if I ever calm it down I'm getting some again.

I found they simply just change color depending on their mood. Feeding/sleeping/mating/finger chasing.

Ugh... I really do miss them guys or maybe just the thought of them being so new and "cool" to me as a 11 yr old kid.

Either way congrats on some great looking fish.
