What cichlid will defend their fry and young?

which ones won't is a harder question

+1

All cichlids as far as I am aware show a bond toward their babies weather they are pit spawners or mouth brooders. It's part of what makes cichlids so interesting and so much fun to keep.

Yes.

How about severums? I'm guessing yes?

Yes.

Basically, as has been alluded to above, you'd have a tougher time finding a cichlid that didn't take good care of its young, than you would finding one that did. About every cichlid I can immediately think of in the trade seem to be good parents, albeit, sometimes it will take a young pair a couple times to get it right. But that's true of almost any cichlid.
