Hello,
It's been a very long time since I've had a Crayfish, but my daughter insisted on getting one. So put it in an old 5 gallon betta tank I had set up. Didn't realize how much havoc it would create, lol! Plants been shredded and it molted. Shortly after its molt, both claws dropped. Not sure if it got caught on the decor, but fast forward a few weeks later, it molted again and I didn't noticed. I saw it crawling along looking for food when I noticed that it looks like its claws are back, but not small little tiny nubs, but full length claws again. They seem skinnier than the original, but surprised they grew back so quickly. In the past, when I had crayfish, they never really grew back that quickly. Usually, it would start small and size up with each molt. Back in the days, I just had normal Crayfish...the kind they used to sell at bait shops. The current one we have is a Blue Crayfish. I've always thought that the Blue Crayfish was some genetic mutation of the "bait shop" Crayfish. Are they different species? Would that matter in it's regenerative abilities?
 
The two species most commonly seen are procambarus clarkii and p. alleni. There’s also p. fallax (now virginialis) which is the parthenogenic marbled crayfish.

The electric blue is derived from p. alleni, and the reds come from clarkii (if I’m not mistaken). They two are sister species and are essentially the same except for color.
If anything, good care, water, and diet should play into regeneration the most.
Iirc most limbs can be regrown within 3 molts.
