Color--Dominance, Age, Genetics, or Luck?

Take Fenestratus, for example. https://www.youtube.com/watch?v=dqd36AWwZSg This fish is AWESOME. Lots of blue, pink/red head. Just a great fish. Especially the photos (which are enhanced I'm sure), but even in the video, that fish just has more color than the Zonatus that's in the tank, too. Why? From the video, he looks to be the king of the tank--does that help his color? This Fen also looks to be totally mature, that helps, too. But what I'd really like to know is this -- does it take many years of many different Fenestratus to finally get one this good? Do you have to breed hundreds of fry to finally get one this good? Or do most of them turn out this good if they're given the time to mature in a big tank? Does a fish have to be the dominant one in the tank to develop this kind of color? What matters most?
