Coloration from pigmented foods

Whenever I go to buy more food, I love to look at the baby versions of my fish. Of course, even in the best of stores, they can never look as good as they do in the tank of a dedicated aquarist, but, months ago, I realized that my red bay snook was really red. Like a fireball in my tank. I assume that this is because their diet contains a large amount of krill,about 50% krill. Last time I went to the store they were out of krill. So, for this month's purchase, they have eaten less krill. I didn't expect to see much of a change, but I did. Within a week, my red bay snook had lost a huge amount of color. Enough to be easily noticeable. Even more interesting is his fins. They seem to be washing out from the base--expect for his pectoral fins.

Understandably, I got worried. IME, paling fish cannot be a good sign, but I don't think anything is wrong. In fact, he even dug a new depression to hang out in. He even keeps both clean. This doesn't make sense, assuming that he is a male and this is pre-mating behavior like I am familiar with in african cichlids.

The real question is has anyone noticed such an immediate impact of diet on their fish? Does the same thing happen with "color enhancing" pellets? What about other pigments--yellow is powerful, how about blue? I'd like to hear similar experiences.
