Colors changed?

I recently got two azul peacock bass about 3 weeks ago. When I first got them their colors were really bright and had a lot of spotting to them. After a few days their colors got darker and less spots. I was just guessing maybe stress from the new tank. But now after 3 weeks or so they are still pretty dark. Any suggestions on why this is? If it is still stress anything I can do to help? Thanks!
 
Could have something to do with that pink and black gravel as well,;)

Azul look best, with dark colors. A black background, and black sand or gravel would bring out their best colors.
