Hello,

I keep hearing and reading that bullheads are monster pigs and eat anything put in front of them.

Mine won't eat anything. Shrimp soaked with garlic, pellets, not even the same worms I caught them on. Would their mouths be damaged from the hook?

A cool thing though is that these guys have realized that my fingers get the sand off of their backs and so they aren't afraid when I put my hand in front of their face with food.

Depending on how you took out the hook it could be possible that it broke their jaw. All I did to get mine on pellets (when I had one) was not feed it for a couple days, then when I feed my cichlids their floating pellets he sees them eating them so he also goes for them realizing they are food

Don't think the jaw is broken as I have seen them both stretch their jaws with no issues.

yeah they are still in shock, most take awhile b4 beginning to eat, some take a long time
maybe u can catch some 1 inch crayfish and dump them in the tank, those will get taken anyday, catch them by diggin in the mud in ditches or creeks

+1 on the crayfish.

I would suggest checking water quality and doing a water change. Quadrupleing the bio load can bring on symptoms you mention. My cats will mouth food and spit it out, but after I do a water change they eat like pigs!!!
