So I have a fresh water tank, and I have heard you can convert some species of fish to freshwater gradually. I was thinking, I could eventually get a bream (legal size) and eventually convert it to freshwater to be with my other fish, I have seen the evidence of it being done. How would I go about doing this?

It can be done but it does put alot of stress on the fish's body internally.

To briefly explain it, marine fish constantly drink water from outside as the salt concentration in their body cells is lower than that of the water they are in.

Freshwater fish constantly excrete excess water as the salt level in their cells is much higher than that of the water they are in.

When you put a marine fish into freshwater, it is unable to excrete the excess water passing into its body.

Some fish are more tolerant and can handle being moved from salt to fresh, mainly estuarine species, however usually they won't last long.

Bream are tidal species and I have seen small ones in full freshwater at some LFS.

if you want to try it, (which I don't personally recommend), you could try starting them off in full marine conditions and bringing the salt level down VERY gradually over a period of months to freshwater conditions, but again I wouldn't recommend it. The fish will be much more susceptible to parasites and disease being kept in freshwater.
