Normal aquarium temps should be fine, the main problem will be stopping the mother from eating her brood and keeping them from eating each other. Put the mom in a tank with the bottom covered by marbles so the babies can escape between the marbles when she releases them might work. some crayfish are more cannibalistic than others. I breed dwarf crayfish and they are less than most. Providing the mom with all the earth worms she can eat will help too as well as induce her to lay lots of eggs next time.

Should i remove the male? And roughly how many babies come from each load?

Oh yes, the male has to go, he will eat the female and the young if he gets the chance. How many eggs is variable but a normal sized crayfish could have a hundred or more. To prevent cannibalism you need to make sure there are plenty of hiding places for the young and for the adults when they are in your display tank.

when the young hatch should i then also remove the mom or is she alright with them?

The mom will eat the babies as fast as she can catch them, she will carry the babies with her for a while after they hatch but when she releases them she should be removed. The bad news is that she doesn't release them all at once. So to keep her from eating them give the babies a place to hide, a layer or two of marbles over a bare bottom will do this and feeding the mom heavy on earth worms will keep her from being all that serious about eating her young. When she has released all her young she should be removed. The babies will need lots of hiding places as they will eat each other too. chopped or minced earth worms are good food for the babies as are baby brine shrimp or daphnia. Cyclopseze will also work.
