Crayfish diet?

So, I have a spare 10 gallon lying around and I'm thinking of using it for a crayfish tank. I have read on them and know about them pretty much everything except one thing. What do I feed them? I read you can feed them Shrimp, Sinking pellets. Stuff like that but I want some more info on what should I feed a crayfish when I get one. I don't know the exact species my lfs has but I know it's a coldwater one which is great since I don't have a spare heater either. Plus, it's pretty warm in my house : 70-74 but usually 70. So thanks in advance! I will be keeping the crayfish alone and with no fish because they will kill pretty much any fish I could have in that tank. Another quick question also. What is the ideal ph level for them. I heard it is around 7.5 which is pretty much what my water is here.
 
Um, if this is in the wrong section, please move it to the correct one. I haven't been on the site in a while so I don't really know if it should be in an invert section.
 
i used to have crayfish i kept them in about 76 degree water and they were by themselves and i fed them turkey fresh dead minnow
pretty much any meat that is available
