What would be a good crustacean that comes out a lot for a 9" quetzal cichlid,5" Severum, and 2" parrot cichlid?

That would be tough. Maybe a large cray or lobster as long as you have a bunch of hiding places. I'd say large prawn but it would already need to be pretty big and you'd have to acclimate that guy to the tank. Most times the cichlids would just kick its ass before it has a chance to get settled in.

I'm getting rid of the quetzal and the parrot. Does that change anything?

Severums aren't as nasty but they will still pick at stuff. Being that inverts are incredibly vulnerable when they shed it would be tough. It's a catch 22 here because if you get a prawn that is bigger than the cichlid, it could easily take that thing down. But there is also that slight chance the fish would get it when it sheds. Lots of hiding places is the best policy. Good luck finding a prawn if you go that route.

At my LFS, there are these giant, 7" long crayfish. Would they get eaten? They seem pretty tough.
