Curriculum to teach about aquaculture

I teach Latin part time at the private classical school and in my room I have a couple aquariums (20g planted and 38g CA biotope). Kids seems to like aquariums, so it is fun the get to share them with the classes I teach (3rd-6th grades). As a result I have actually often had to limit their questions and how much we talk about aquariums in class so we can do our class work, however I decided to start an "aquarium club" during the lunch recess for the kids who are the most interested so they can learn more. We will mostly just talk about fish, but I am wondering if anyone has any suggestions for a broad spectrum aquarium book I can follow so we aren't just jumping all over the place in our topics and activities. I would like something that discusses the ammonia cycle, water chemistry, fish species and compatibility, plants and photosynthesis, aquarium maintenance, biotopes, and anything else pertinent to being a well informed aquarist. The kids will not be reading the book so it does not have to be grade school level, I would just like the use it as a guide to organize our topics. I would prefer something more advanced that I can simplify as needed when I teach the subject.

Any suggestions for books?

I think being so rigid, (sticking to a book) will lose a lot of kids attention, I'd keep it more casual. Part of fishkeeping is researching this stuff right? Just my humble opinion, definitely not a teacher here :)
 
Maybe you can get a few copies of amazonas. Alwayd interesting and maybe a little less structured
