To establish a healthy enviornment for your fish to live. The cycle creates bacteria that will consume the amonia that fish put out and turn it into Nitrates. A simple water change gets rid of the Nitrates.
 
but i put fish in a tank with out cycling and they are just fine till this day

Large tank and a few small fish, you can get away with doing that. It's just called cycling with fish. If you start with just a few fish and slowly build up the numbers over a few weeks it's OK.

The tank has still cycled, but the ammonia and nitrite never built up to dangerous levels, the filters began to cycle and process the waste before that happened.

Now if you had added a full population of monster fish to a brand new tank and filters you would have had a disaster on your hands as the ammonia increased faster than the bacteria in the barren filter could multiply.
