That's a young oscar and not TOO big of a chunk. It should grow back with good water quality and frequent water changes.

The real question is what are you going to do to prevent it from happening again? :)

It doesn't look that bad (meaning as bad as it could be) from the pic. Clean water and some good food and he/she should heal right up.

My GT had more than that missing from his tail and although it has taken about 3 months it's almost 100% back. It was the whole center of the tail and almost all the way back so it took a while. Looks good as ever too although the color is taking a bit to return to normal.
 
I bought a severum with a huge rip in his anal fin. Thought he would heal up. 6 months later he looks the same. Moral of the story: give em clean water now and always, and you shouldn't have any problems with your fish healing back up.
 
Thats nothing it'll be fine. My vieja had his whole tail fin off. It ended up growing it all back and looks normal. He was half dead and was a fighter.
