Im probably going to pick up a sun catfish from an LFS that they are pretty much giving away because it got its fins chewed off. Im guessing they put it in a tank with some aggressive cichlids or something and no where for it to hide. How easy would it be for me to get its fins to heal back and for it to have a good life?

Hard to tell without a pic, but most catfish are pretty tough. Give it food, clean water and a place to hide and it should heal up.
Fins will grow back given time. I got 2 Raphael's from walmart several years ago that were in a tank full of puffers. The puffers had eaten off the catfish's pectoral and dorsal fins. The were only nubs left. Their fins grew back and are still thriving today. Just keep the water pristine, feed a healthy diet, and add some Melafix if you like. I didn't add any to the 2 Raphael's and they did just fine.
