Decisions of Breeding

Alright, I just got back from an unfortunate decision on an institute of higher knowledge and I'm going to probably be living at home. So I decided that I'm going to take my chances at breeding. I want to either breed Firemouths, Salvinis, or a Firemouth x Convict. I have always wanted to take a fish from egg to full grown great specimen form. So if I get a breeding pair I would take the fry and move them to a different tank and raise them until I can find a good specimen (hopefully male because for some reason I like male fish more). I have a 35g tank with a senigal bichir, a raphael cat, a convict and a firemouth (I think both cichlids are both male), I also have a 30g unused tank.

Questions:
Which tank should I use?
Which breeding pair should I use?
 
salvinis get too large for those tanks, so personally i would go with firemouths. convicts are super easy plus firemouths are more flashy imo.
