what exactly is it. do the scales actually peel off

No its looks like that kindoff just like the fish normaly starting by the gills changing color slowly fades through the body the new orange or red color looks like the skin is coming off and underneeth is the new color but there is no skin coming off that you can see. Sorry for the crappy explanation thats the best i can describe it.

yes it is like a molting of a caterpillar just a change of color that looks as if the old skin is peeling off
