Are there any differences in the salt used for freshwater vs salt used for freshwater such as DocWellFish Aquarium Salt? I have some salt bought from a freshwater aquarium store but not sure if there are any differences.

Aquarium salt-plain sodum chloride in a fancy package. Table salt costs less and just as useful.

I've heard of people doing Saltwater dips for Freshwater fish and vice versa. So I don't think that it'll hurt them, but once the ick is gone, I think a big water change may be needed.

Yes, dips should be done using regular salt. Ocean salt contains high levels of magnesium ions and sulfate ions. Additionally, the resulting pH from using ocean salt is way too high for most freshwater fish.
