Intraspecific variation. People have made a big hubbub over this for a long time, but there's nothing to it as far as speciation is concerned. Likely in this situation your healthier looking fish with the longer head and more streamlined form is the more dominant of the two and has freer reign of the tank, allowing for better muscle tone. The one that's shedding teeth looks a bit less toned. That's all I'd say it is.

In my experience the goliaths with a “flat” snout are the ones that are Skittish. It happens overtime after repeated pushing against the aquarium glass. I’m yet to see a wild Goliath (or any other tiger gush) with a flat snout.

Yes they keep slamming into the walls of the tank and land up with a flattened snout similar to shovel nose cats that end up with bent snouts. Placing fast swimming fish in square tanks unfortunately may result with that happening.
