How would a dirt bottom aquarium work?
how to maintain them?
wouldnt they get stinky or something?

I sort of have one. When I got my scuds, they came with a lot of dirt. There is a thick layer in parts of their holding tank. Not much different than sand besides being even smaller grains and getting kicked up every time I do anything, and making the water murky.
 
Look up walstad method. There's tons of info on his to do it. Really beneficial for planted tanks obviously. Some sites go into detail about the particular dirt needed. I personally use fluval stratum capped with river gravel and love it for plants.
 
I use organic no fertilizers soil from Home Depot and cap with either sand or 2-4mm gravel. A 3-5lb bag is enough for 55-90g tanks. I also place a piece of fiberglass screen between the layers to keep them from merging together.
