I'm thinking about adding a discus to my tank but I'm afraid he might eventually get eaten by my silver arowana if it doesn't keep up with its growth rate. How fast do discus grow??

Three is not exactly the best number. Get 4-6 minimum. Growth rate depends on how you accommodate your fish. As juvenile discus require plenty of feedings in a day, start with a barebottom tank until they reach 4-5 inches in body diameter. They are easily stunted in poorly maintained tanks.
